The domaine is the biggest owner of vines in this 1er Cru and the wine has become, over time, its signature cuvée. With 50% fermented and aged in barrel for a year before receiving a further six months in steel, along with the other half of the cuvée, this is a complex and layered wine, offering great length and persistence.

Hailing from a family of winegrowers, Bernard Defaix set up his eponymous domaine in 1959 with just 2 hectares. Today his son, Didier runs the estate, working along his brother Sylvain, and wife Hélène. Farming organically, the estate manages 27 hectares that it owns and a further 10 that it buys fruit from through long longstanding arrangements with growers. 20 hectares of the domaine consist of various parcels of straight Chablis (12 hectares) and an important holding in the 1er Cru Côte de Lechet (8 hectares). The wines are about as definitively Chablis as you could wish for, bursting with vivacity and classical Chablis minerality.

Goods can be returned, if possible in original packaging, for a full refund or replacement.
If you receive the wrong product, or a product is faulty, or its bottle or cork is damaged when you receive it, we will replace or refund you with the original price and, if applicable, the cost of returning it.
We ask to be notified in writing or by telephone within seven days of the date of delivery or the time you are aware that the product is faulty or damaged. Products and packaging should be kept until we inform you whether we want you to return them to us or not as we may undertake an analysis or return them to the producer.
Nothing in this returns policy affects your statutory rights or your rights under any contract you may have with us.
